Sweet Potato Cheese Spread (Kopie)
I became a touch obsessed with the sweet potato cheese spread I bought a few times this summer at the Liberty Village farmer's market on Sundays. It barely lasts a day in our house because it is so freaking delicious! I finally got my hands on their recipe and made some this weekend. Pure heaven!
2 cups mashed sweet potato
1 (8 oz) light cream cheese
1/4 cup minced onions
1/4 cup finely chopped pecans
2 tsp hot sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1. Let cream cheese come to room temperature.
2. Blend together the mashed sweet potatoes and cream cheese.
3. Add remaining ingredients and mix thoroughly.
4. Chill in covered container for at least 4 hours.
5. Serve with your favourite crackers.
