Aloo palak- Potatoes in a spinach gravy (Kopie)
Ingredients:
4 cups of spinach, blanched and pureed.
1 can of diced tomato
1 onion, I used red, finely chopped.
1 T ginger-garlic paste, or 2 cloves of garlic minced and 1 inch piece of ginger minced.
Spices: 1/2 tsp cayenne pepper, 1 tsp ground cumin, 1/2 tsp turmeric powder, 1/2 tsp garam masala powder.
2 medium potatoes diced
1 T EVOO
Salt and pepper
Cook the onions, ginger-garlic till the onions turn pink.
Next add the tomatoes and spices and cook for about 4-5 minutes
Traditionally, this is served over white basmati rice or with some hot rotis! I served mine over some quinoa and garnished with cilantro.
