‘Better Than’ Almond Joy Cookies (Kopie)

Ingredients
3 cups dried coconut
1 cup almond flour/meal
1 cup honey (preferably raw)
1/3 cup melted coconut oil
1 Tbsp vanilla
1/2 tsp salt
optional – almonds, and/or equal amounts cocoa/carob, coconut oil, and honey for the chocolate drizzle

Method of Preparation
1. Combine all but the optional ingredients together until well mixed.
2. Place spoonfuls of approximately 2 Tbsp of the mixture onto dehydrator trays and dry at 115° for about 12 hours. The benefit of this is that you will not lose and beneficial properties from the raw honey and coconut oil. If you do not own a dehydrator, never fear! Just place on a cookie sheet and bake as low as your oven will allow for about an hour and a half.
3. Place in a sealed container to retain moisture.
4. If using almonds, press one into the bottom of the cookie.
5. To include the chocolate sauce, mix together equal amounts of cocoa powder, melted coconut oil, and honey to make a syrup. You can then place a spot of chocolate onto a sheet of waxed paper and press the cookie onto it,
completely coat the cookie in chocolate, or like the very first photo on this post, just place a small spot of chocolate on top of each one. If using chocolate, place in the refrigerator until set, remove before consuming so they soften.

Not only do these make a great treat for everyone that doesn’t know better, you’ll have peace of mind knowing you won’t be compromising nutrition as much as you would the normal sugar cookies!

*Nourishing Notes
Use local raw honey.
Extra virgin coconut oil has anti viral and anti fungal properties.
Buy only dried coconut with no other fillers in the ingredient list.
Choose carob powder or raw cocoa for making the chocolate sauce.
The Verdict -
Level of difficulty – These are as easy as they come! just mix together and dehydrate or bake.

Cost – These cost me about $7.00 to make 3 dozen cookies, or about $.20 each.

Time –

15 minutes active prep
12 hours to dehydrate or one hour to bake
*optional almond pressing and chocolate syrup, 15 minutes
Taste – These were absolutely phenomenal and I’m pleased to finally have a grain free cookie made with a natural sweetener. Everyone who has tried them loves them (well, maybe not those that don’t like coconut!).
