Broccoli with Shallots and Garlic (Pareve)

Serves 6

9-10 cups water
1 teaspoon kosher salt
2 lbs. broccoli crowns (without stems)
3 cloves garlic, minced
2 shallots, sliced
2 tablespoons olive oil
salt & pepper to taste

Bring the water and the salt to a boil. Cut the broccoli into 2 inch florets and add to the boiling water. Bring the water to a boil again and cook for 2 minutes, or until you can just put a fork into the broccoli. Drain immediately into a collander and run cold water over the broccoli until it stops steaming. Remove from the collander and place the pieces on a clean towel or paper towels to dry completely.

Place the olive oil into the same pot and heat on medium heat. Add the shallots and cook on medium high heat until they brown. Add the garlic and cook for one minute more. Add the broccoli pieces and toss gently. Add salt and pepper to taste.
