Bruschetta with Greens (Kopie)

Serves: Serves 4

4 thick slices Italian country bread (best if day-old)
1 clove garlic
1/2 pound baby spinach, young asparagus or broccoli rabe
Unfiltered Extra Virgin Olive Oil
Gray salt

Place bread on a grill pan, or toast or broil until the slices are well browned on both sides. Peel and cut in half the clove of garlic and rub over both sides of each bread slice. Blanch spinach, asparagus, or broccoli rabe, and place on top of the bread. Generously drizzle each slice with olive oil and a dash of gray salt.
