Caesar Salad (Kopie)

RAW EGG WARNING The American Egg Board states: "There have been warnings against consuming raw or lightly cooked eggs on the grounds that the egg may be contaminated with Salmonella, a bacteria responsible for a type of foodborne illness. Healthy people need to remember that there is a very small risk and treat eggs and other raw animal foods accordingly. Use only properly refrigerated, clean, sound-shelled, fresh, grade AA or A eggs. Avoid mixing yolks and whites with the shell."

Serves: 8 Servings

4 heads romaine lettuce, outer leaves removed, or 1.5 pounds romaine lettuce hearts
3/4 cup Caesar Dressing
Pizzetta's with Olive Tapenade and Pecorino Cheese, used as croutons
2 tablespoons freshly grated Parmesan

Put the whole romaine leaves in a work bowl. Add enough of the dressing to coat the leaves and toss well. Arrange the leaves in a serving bowl with their tips up, and intersperse the pizzetta's, if desired. Sprinkle the Parmesan over all.
