FRESH MEAT STEW (Kopie)
1½ pounds beef, cut in cubes
2 cups water
3 onions, sliced
1 tomato, peeled and sliced
¼ to ½ cup peanut oil
2 chili peppers or ½ - 1 tablespoon crushed red pepper
In a heavy stewing pan, combine meat, water, and onions. Simmer 30 minutes. Add tomato, oil, and chili peppers. Continue simmering until meat is tender, 30 to 45 minutes more.
Variations: This same stew may be made with chicken, lamb, or fish. Eliminate the chilli pepper for a southern Zambian version.
Both north and south in Zambia, this would be served with cornmeal mush, called Nshima.
Serves 4 - 6.
