Grilled Chicken Cordon Blue Sandwiches (Kopie)

2 large boneless, skinless chicken breasts
4 whole wheat hamburger buns
4 slices Swiss cheese
4 slices deli ham
a dab of butter
Mustard or BBQ sauce

1. Pound out chicken to even out the thickness. Cut each breast in half to make smaller pieces that will fit on a bun.

***the chicken breasts I used were enormous, so I actually only used one breast, fillet it, and then cut those two pieces in half to make four smaller pieces.

2. Lightly butter the insides of each hamburger bun and set aside.

3. Season chicken with salt and pepper before placing on a heated grill. Grill chicken, flipping once, until cooked through.

4. Lay a slice of Swiss cheese on each piece of chicken. Quickly toss the sliced ham on the grill and flip once or twice to give it some grill marks and get it nice and hot. Then place a slice of ham on top of the Swiss cheese.

5. Place the buns on the grill, buttered side down and grill for a minute or two.

6. Remove and assemble the chicken on the buns to make sandwiches, topping with some lettuce and/or mustard or BBQ sauce. (I personally like BBQ sauce, Brett liked mustard!)
