Healthy Huevos (Kopie)

INGREDIENTS
?1/2 c. Egg Beater egg whites
?1/4 c. Amy’s organic black bean chili
?4 slices jalapeno, chopped
?3 tbsp. chopped white onion
?3 tbsp. chopped green pepper (or red or yellow!)
?1/4 tsp. chipotle chile powder
?1/8 tsp. ground black pepper
?1/8 tsp. oregano
?1/2 Tandoori naan bread (or whichever brand you prefer)
?1/4 lime

STEPS

Combine onion and peppers in a small, hot skillet and slowly cook through. Add chile powder and oregano. In a separate skillet, cook up the eggs. Since we’re only using egg whites, my preferred method is scrambled – it also melds the flavors better.

Once eggs are 95% cooked through, add in the onion/pepper mixture until combined and remove from heat. Toast or warm your 1/2 naan and plate. Add 1/2 the egg mixture on top of the naan. Ladle a spoonful of the bean chili over top and repeat with the remaining egg and beans.

Spritz with a squeeze of lime and dig in! It’s best nice and warm and all mixed together. Enjoy – it’s so yummy you will forget it’s low calorie!
