Low-Fat Mincemeat Pie (Kopie)

•1 low-fat pie crust
•1 jar fat-free mincemeat (see above)
•4 medium apples, diced
•½ cup unsweetened fresh orange juice
•2 egg whites, lightly beaten
•1/4 to 1/3 brown sugar, to taste

Preheat oven to 350 degrees Fahrenheit, and prepare pie crust. In medium bowl, mix mincemeat, diced apples, orange juice, and egg whites. Stir in sugar to taste, depending on the tartness of your mincemeat. Sprinkle pie shell with a small amount of sugar, then spoon in filling. Bake 45 minutes or until bubbly.
