No-Bake Energy Bites (Kopie)

1 cup dry oatmeal
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup flaxseed
1/2 cup chocolate chips
1/3 cup honey
1tsp. vanilla

toss everything into a bowl and stir until well mixed
cover and chill in the refrigerator for at least 30min
remove from the fridge and shape into 1"balls
store in an airtight container
will last in the refrigerator for at least a week

P.S. The possibilities of this basic recipe are endless. Get creative and sub in your favorite dried fruits/berries, nuts, grains, or other sweet delights.
