Oatmeal Raisin Cookies (Kopie)

Chewy Oatmeal Raisin Cookies
Makes 18 big cookies
From Baking Illustrated -- awesome cookbook. If you don't have it, you should go get it. Recipes, tips, and all sorts of goodness.

1 and 1/2 c AP flour
1/2 t baking powder
1/4 t nutmeg
1/2 t salt
2 sticks butter
1 c packed light brown sugar
1 c sugar
2 eggs
1 cup rolled oats
1 and 1/2 c raisins
Preheat the oven to 350-degrees. 

Whisk together AP flour, baking powder, nutmeg, and salt in a bowl. Not the bowl on your mixer. You'll want to use a separate medium-sized bowl.

With the mixer, beat the butter (softened but still cool) until creamy. Add the sugars and beat until fluffy. It'll be about 3 minutes. Beat in the eggs, 1 at a time.
Now stir the dry ingredients slowly into the mixer bowl. 

Stir in the oats and raisins.

Drop the cookie dough on the baking sheets. You want big 2 T size rolls of dough. Space them a couple of inches apart to keep those big cookies from baking into a lump.

Bake until the edges turn golden brown. Take them out 22 to 25 minutes in, rotating them halfway through. Don't let them overcook. You want the center nice and soft.

Let the cookies cool for a couple of minutes before transferring to wire rack to cool for at least 1/2 hour.
