On the go gluten free spaghetti sauce (Kopie)

This is just about as easy as it gets for a yummy spaghetti sauce! The best part is you start it in the crock pot so all you need to do when you get home is boil some noodles! This makes a great dish for having friends over as well. Saturday was spent running to and fro but I really wanted to have some friends over so I started this spaghetti sauce in the morning and we were able to eat and visit with our friends that evening without much cooking involved. Serve it with a side salad and maybe a little garlic bread and you're set! When we're feeding a crowd I've been known to have 2 or 3 crock pots full of sauce and then a large pot of gluten free noodles for those of us who can't eat wheat and then another pot of regular noodles for everyone else. Just be careful to keep things separated so that nothing gets mixed up!

This recipe came from a friend years ago. I don't know where this recipe originated but if you do let me know and I'd be happy to give credit where credit is due.

Slow Cooker Spaghetti Sauce

1 lb ground turkey
1 medium onion chopped
2 14 oz cans diced tomatoes with juice
1 6oz can tomato paste
1 8 oz can tomato sauce
1 bay leaf
4 garlic cloves, minced
2 t dried oregano
1 t salt
2 t dried basil
1 T brown sugar
1/2 t dried thyme

1. brown meat and onion in saucepan. Drain well. Transfer to a slow cooker.

2. add remaining ingredients

3. cover and cook on low for 7 hours

4. If the sauce seems too runny, remove lid during last hour of cooking.

You know, as I was typing this recipe I was thinking that this meal could also make great football food. Maybe this could start a fun night where you invite a few people over, either close friends or maybe couples you might like to get to know a little better. Maybe this could start a whole new tradition for you and you may even find you make some close friendships while you're at it! There's nothing cozier than being invited into someone's home and I think that this weekend might be a great time to start this new tradition.

For dessert just make a batch of these gluten free chocolate chip cookies and brew a pot of decaf coffee! Everyone invited will love it!
