apple compote (Kopie)

Yield: 4-6 persons
1kg cooking apples
1 cinnamon stick
150ml water
60g caster sugar
1 packet vanilla sugar
some toasted almonds, to serve
some raisins, to serve

1. Peel the apples. Remove the cores, seeds and cut into cubes. Place the cut apples in a saucepan with cinnamon stick, water, sugar and vanilla sugar.

2. Cook out the over low heat for 20 - 25 minutes to a compote, stirring from time to time. If the texture is too runny then leave to reduce until you have a thick texture.

3. Serve chilled and sprinkled with toasted almonds and some raisins if liked.
