Baked Bayou Chicken (Kopie)

•6 boneless skinless pieces chicken breast
•1/4 cup fat-free Italian salad dressing
•1/2 cup dried bread crumbs
•2 Tbsp chopped fresh parsley
•1 clove garlic
•1 1/2 Tbsp Creole seasoning

Two hours prior to meal: Measure dressing into gallon-sized ziploc bag, add chicken pieces, seal. Place in refrigerator to marinate 1 hour.

One hour prior: Preheat oven to 325 F. Crush bread crumbs, mince garlic, and combine with other ingredients. Remove chicken from marinade and coat with crumb mixture. Coat a 13 x 9 baking dish with zero-calorie non-stick cooking spray. Bake 50 minutes or until juices run clear.
