Chicken Taco Soup (Kopie)


Whipped this yummy recipe up last weekend for my sickie daughter, who LOVES soup.

Chicken Taco Soup
3 boneless chicken breasts
1 box chicken broth
2 Tbsp taco seasoning (recipe follows)
1 cup diced onion
1 Tbsp minced garlic
1 cup sliced carrots
1 can corn
1 can pinto beans, drained

Taco Seasoning
2 Tbsp chili powder
3 tsp onion powder
2 tsp cumin
2 tsp paprika
3 tsp garlic powder
2 tsp salt

Mix taco seasoning and set aside.

Cook chicken breasts in your preferred method (I usually boil chicken breast in salted water for about an hour). Dice chicken into small chunks.

Saute onion in a little bit of olive oil.

Add carrots, chicken and taco seasoning (you could also use a pre-made packet of taco seasoning). Stir to coat and saute for a few minutes, then add chicken broth.

Bring to a boil, turn heat to low, cover and simmer for an hour.

Add corn and pinto beans and bring to a boil for about five minutes.

Serve with sour cream, tortilla chips and cheese for garnish.

Kids gobbled it up and asked to take it to school for lunch the next day - which means this meal was a success!
