Lemon Sorbet (Kopie)

Ingredients
•1 ½ cups water
•1 ½ cups granulated sugar (or to taste)
•1 ½ cups fresh lemon juice
•1 Tbsp freshly grated lemon zest
•pinch of salt

Instructions
Stir together water and sugar in medium saucepan over medium-high heat. Heat just until boiling, when all sugar is dissolved. Remove from heat, stir in lemon zest, cover, and let stand 10-15 minutes. Strain and stir in lemon juice and salt. Let cool, cover and chill overnight, or at least 4 hours. Pour into ice cream maker and prepare according to manufacturer's instructions OR see tips under "No Ice Cream Maker?"

Variations
•For lime sorbet, substitute lime juice and zest for lemon.
