Honeydew Sorbet (Kopie)

•4 ½ cups diced honeydew melon
•1/3 cup granulated sugar (or to taste)
•½ cup fresh lime juice
•1 Tbsp freshly grated lime zest

Add sugar and lime zest to small bowl. With the back of a spoon, press zest to release oils, and let sit 5-10 minutes before mixing in lime juice and straining out zest. Process until smooth in food processor with melon chunks, cover and chill until cool all the way through. Transfer to ice cream maker and follow manufacturer's directions, OR see "No Ice Cream Maker?"

•Try various kinds of sweet, fragrant melon, altering sugar measurement as needed.
