Cajun Meatloaf (Kopie)

•2 pounds ground meat
•1 egg
•1/3 cup finely ground bread crumbs
•1 medium tomato
•1/4 cup onion
•1/4 cup red bell pepper
•1/4 cup celery
•1 1/2 tsp Cajun seasoning
•1/2 tsp salt
•1/8 tsp black pepper
•2 tsp Worcestershire sauce

Preheat oven to 350 F. Remove seeds from tomato and pepper, finely chop all vegetables. Combine all ingredients, form into loaf, place in foiled or 2-piece meatloaf pan. Bake 60-70 minutes.

(If desired, remove from oven 10 minutes before done and spread ketchup or chili sauce over top, replace in oven, bake another 10 minutes.)
