Borek (Kopie)

200g feta cheese, crumbled with a fork
1 egg
A bunch of parsley
Black pepper
Filo pastry
Melted butter

1. Crumble up the feta cheese in a bowl and whisk in the egg. Pre-heat the oven to 180oC.

2. Chop up the parsley (I always try to chop just the leaves and not the stalk but that's probably just me...) and add to the mixture. Season with lots of black pepper. That seems to be a theme at the moment which is weird considering I don't really like black pepper.

3. Brush a sheet of filo pastry with the melted butter, put another sheet on top and brush that with butter.

4. Cut up the sheets so you have 3-4 smaller rectangles.

5. Take a small ball of the filling and roll it into a sausage in your hands. It's way easier to do it that way.

6. Place at the top of one of the rectangles and roll up leaving a bit of a gap at either end so you can fold/try and do something tidy with the ends.

7. Brush the finished product with butter and place on a well-greased baking tray. Put in the oven for 10-15 minutes until golden brown.
